26、 The cook and restaurant owner Cecilia Chiang was born into a rich family in Shanghai with two full-time cooks—one from the north and the other from the south. In 1959, Chiang went to the U.S., where she paid $10,000 to help two men rent a restaurant. But they backed out on the deal and the money couldn't be returned. Rather than lose the funds, Chiang decided to make it herself.
Chiang was shocked by the food most Americans considered to be Chinese—like chop suey and chow mein. “They think these are the only food we have in China, ” she said with a laugh. She introduced Americans to an entirely new set of dishes from northern China, Sichuan, and Hunan. Her high-end restaurant Mandarin opened on Polk Street. At the Mandarin, visitors could enjoy dishes that are very common today but many Americans had never tried before—pot stickers, Peking duck and hot and sour soup.
The restaurant wasn't immediately successful, but about a year after opening, the Mandarin received a mention from the San Francisco Chronicle's Herb Caen. The effect of the writer's article was powerful. Tourists, officials and famous stars—from Mae West to John Lennon—crowded the Mandarin for then-unfamiliar food like tea-smoked duck and twice-cooked pork.
“Cecilia single-handedly brought traditional regional Chinese food to the American table, ” said Martin Yan, cook and longtime host of the PBS cooking program “Yan Can Cook”. In Food & Wine, Museum of Food and Drink director Peter Kim called Chiang “paradigm-shifting”. “Her influence continues to inspire today's cooks, ” he said.
Chiang remained active after her official retirement, helping her son, Philip, as he co-founded the successful P. F. Chang's restaurant chain. On Oct. 28, 2020, Chiang died at her home.

27、The last decade saw the rise of the field of “plant neurobiology”. That debatable field is based on the idea that plants — which do not possess brains — handle information in ways similar to complicated animal nervous systems. This thinking implies that plants could feel happiness or sorrow or pain, make intentional decisions and even possess consciousness. But the chances of that are “effectively zero.” “There’s nothing in the plant comparable to the complexity of the animal brain,” says Taiz, from the University of California, Santa Cruz.
Some plants are capable of complicated behaviors. For example, wounded leaves can send warning signals to other parts of the plant. But plants perform these with equipment that’s very different from the nervous systems of animals, no brain required, Taiz argues. He and colleagues point out methodological faults in some of the studies that claim plants have brain-like command centers and animal-like nerve cells. But beyond the debate over how these studies are conducted, Taiz’s team argues that plant consciousness doesn’t even make sense from an evolutionary point of view.
“Complicated animal brains advanced in part to help a living being catch a meal and avoid becoming one,” Taiz says. “But plants are rooted to the ground and rely on sunlight for energy, an inactive lifestyle that doesn’t require quick thinking or outsmarting a predator (捕食者) — or the energetically expensive nervous systems that enable those behaviors.” “What use would consciousness be to a plant?” Taiz asks. “If a plant worried and suffered when faced with a threat, it would be wasting so much energy that it wouldn’t have any left to do anything about that threat,” Taiz says. “Furthermore, plants have plenty to do without having to be conscious, too. With sunlight, carbon dioxide and water, plants create the compounds that sustain much of the rest of life on Earth,” Taiz points out. “Isn’t that enough?”
【1】What is probably Linchol Taiz’s opinion concerning plants?

29、Skyscrapers (摩天大楼) are the symbol of urban life. City people are used to seeing tall buildings and apartments. Farms, on the other hand, are associated with rural life. However, there are experts who think skyscrapers should become farms to meet the Increasing food needs.
By the middle of this century, some scientists suggest, almost 80% of the earth’s population could live in cities. In addition, the population could increase to 9.1 billion people during that time yet the amount of land available for farming will be the same. If current farming practices don’t change, we will need an area of new land to produce enough food for the planet.
Vertical (垂直的) farms, where urban farmers could grow crops io environmentally friendly skyscrapers, could be the solution. In spite of concerns over high costs, experts want to make it a reality and use these skyscrapers to grow crops.
Vertical farms would have many advantages, supporters say. Unlike traditional farming, vertical farming could be free of chemicals and diseases. Besides, crops would not suffer from problems like flooding. Finally, vertical farms would reduce the cost and negative effects of transporting food over long distances.
Some argue that although crops growing in a tall glass building would get natural sunlight during the day, it wouldn’t be enough. For this reason, vertical farms would need additional light sources, such as artificial light.
Another way of growing fresh food is to build urban farms on rooftops. This more practical approach may be more achievable than the idea of farms in skyscrapers, researchers suggest. Experts agree that innovative (革新的) farming practices are needed to support the need for more food at affordable costs, both to the farmer and to the consumer, but the best ideas could be yet to come.
【1】What primary problem could vertical farming settle?
A.Poor state of rural life.
B.Shortage of food supply.
C.High cost for transporting crops.
D.Environmental pollution by transitional farmings.
【2】What is the advantage of vertical farming?
A.It can produce organic food.

Last Christmas my older sister Jane got a unicycle (独轮脚踏车) she had requested. I thought it kind of strange, wondering why she would want something like that. She did ride and practice for a while, but eventually stopped.
Curious, I tried it, finding it very hard and thinking it impossible for a weak girl like me to learn. Since our dining room of our old house had low beams (屋梁), I used them like monkey bars to practice riding, which helped a lot. Because I thought it was really fun, I practiced every spare moment I had, teaching myself to go forwards, backwards and to turn. Practicing was something I loved to do in my spare time, but it did get discouraging when I fell. After months of practicing, I finally made it.
One morning, our teacher Maria excitedly announced that a school talent show was to be held to raise money for charity. She encouraged my classmates to sign up for it. I’m not always best in front of a crowd, which was why I was very nervous when I meant to put on my performance by doing a hula hoop (圈) and riding a unicycle on stage. But I overcame my fear and entered myself for the talent show, for which I practiced a lot in case I should mess up.
My routine (整套动作) was to do the hula hoop from my neck, down to my stomach, then to my knees. After that, I was to ride my unicycle forwards and backwards on stage. Lastly I would do the hula hoop while riding the unicycle. I was to do all this accompanied by my carefully selected music. I wondered what people from my seventh grade would think of my performance. With my friends inspiring me, I built up my confidence. On the night of the show, many people found out there was going to be a unicycle performance, so more came, even the headmaster.
Para. 1: I was both nervous and excited when it was my turn.
