22、Many jobs must be done with two people. One person takes the lead. The other helps. So it is with the human body. Much of our body depends on the cooperation between substances. When they work together, chemical reactions take place smoothly. Body systems are kept in balance.
Some of the most important helpers in the job of good health are the substances we call vitamins. The word “vitamin” dates back to Polish scientist Casimir Funk in 1912. He was studying a substance in rice. Funk believed the substance belonged to a group of chemicals known as amines (胺类). He added the Latin word “vita”, meaning life. So he called the substance a “vitamine”—an amine necessary for life.
Other studies found that not all vitamins were amines. So the name was shortened to vitamin. But Funk was correct in recognizing their importance.
Scientists have discovered 14 kinds of vitamins. They say vitamins help to carry out chemicals changes within cells. If we do not get enough of the vitamins, we are at risk of developing a number of diseases. This brings us back to James Lind of Scotland. In the 1740s, Lind was a doctor for the British Navy. He was investigating a problem that had existed in the Navy for many years.
The problem was the disease scurvy(坏血病). The sailors were weak from bleeding inside their bodies. Even the smallest wound would not heal. Doctor Lind thought the sailors were getting sick because they failed to eat some kinds of foods when they were at sea for many months.
Doctor Lind separated twelve sailors who had scurvy into two groups. He gave each group different foods to eat. One group got oranges and lemons. The other did not. The men who ate the fruit began to improve within seven days. The other men got weaker.

23、David Frank started working for tips when he was 11 years old, delighting restaurant diners in New York with his magic tricks. As a teenager he would make an average of $60-70 in an evening—not bad, but he wanted more. So he started reading research on tipping, and found a study showing that servers who left a sweet at the end of the meal could up their pay. But fuzzier factors also seem to matter, like the feelings of gratitude that Mr. Frank inspired. A Survey in 2010 by Ofer Azar of Israel's Ben-Gurion University of the Negev found that 85% of American tippers claimed to be following a social pattern, while 60% said they tipped to avoid guilt.
During the pandemic these fuzzy factors appear to have strengthened. Mr. Lynn observed that people have been tipping more generously even while ordering take-away food.
The presence of a pandemic or of a magician performing at one's table are just two of many factors that may affect the size of a tip. A tipper may simply be touched by the server. If a waiter squats down beside you at the table as he or she takes your order, that often brings a higher tip. Good weather may encourage generosity too. Race can be an uglier factor. A study of tips for cab drivers found that black drivers were tipped on average at a rate of 13%, while white drivers got 20%.

So-called self-neglect cases generally involve the inability to perform basic self-care, such as providing oneself with food, personal health, medication and safety.

Mr. McCormack, 75 years old, and his wife, 71, both had mental illness and stayed in hospitals from time to time, unable to care for their possessions. Despite repeated visits to their home by local officials, the McCormacks declined assistance. But after they were found living in their car parked outside their house in December 2017, officials removed them from their home and helped them settle in a nursing home.
Self-neglect cases, like above, involved 144,296 people across the country in 2018, according to a report. The federal government doesn’t have comparable data for previous years, but several state and local service providers say they are seeing the self-neglect problem swell.
The reasons seniors stop caring for themselves vary, including illness, depression and poverty. The loss of the spouse or a neighbor who previously kept an eye on an individual often starts a decline into self-neglect, experts say. And the key to reducing self-neglect cases is providing services to enable seniors to remain in their homes safely, such as reliable transportation for medical appointments and shopping, as well as affordable home help.
