  • 22、The sparkling drink (气泡酒), Champagne, which we’ve all come to adore has an interesting backstory. Back in the 1690s, wine growers in France were trying their best to develop a new version of wine that would rival Burgundy wines, which are considered to be the best money can buy. The pioneer leading this project was Dom Pierre Pérignon, who was a French monk.

    However, these efforts kept failing. It was all down to the fermentation (发酵) process being stopped because of cold winters in the region. But then something magical happened. When springtime rolled around, the yeast (酵母) became active again. The delayed fermentation process caused carbon dioxide to be released in the bottles that the wine had been stored in.

    The result? You guessed right: champagne!

    However, in recent years, some have argued that an Englishman was actually the first to invent sparkling wine, which, they claimed, happened around 30 years earlier. A scientist named Christopher Merrett was apparently experimenting with different ideas, one of which involved adding sugar to wine. The debate continues, although we recommend you avoid saying this to any French people, especially if you are a guest in their house!

    Today, the Champagne regions in France consist of over 34,000 hectares given to vineyards (葡萄园). It produces 300 million bottles of sparkling wine every single year. Interestingly enough, many argue that three grape varieties are used in the Champagne region. However, the truth is that there are actually seven varieties that can be used. The area is home to over 250 Champagne houses directing the industry. The industry directly employs around 30,000 people and had an annual global market size of nearly $6 billion U.S. dollars in 2021.

  • 23、   If you live in a desert, maintaining a supply of fresh water is a challenge. Even in inland deserts, though, water is often present in the air as vapour. The problem is how to obtain this vapour effectively and cheaply. And that is what the researchers of the University of Connecticut hope they have managed to do.

    Whether water can be got from the air depends on the air's relative humidity(湿度). A good way to get air to give up some of its water is to cool it to the point where its relative humidity is 100%. Sometimes this happens naturally at night, causing mist and dew to form. These can be collected in special traps in areas where liquid water is rare. But if night cooling does not bring air all the way up to 100%relative humidity, building water traps out of special materials might give nature a helping hand.

    Adsorption(吸附法)is a process which picks water molecules(分子)from the air that has less than 100%relative humidity by attaching them to the surface of a solid material. The molecules are held there by electrostatic connections called Van der Waals forces.

    To collect a lot of water in this way requires a material that has two properties. One is a large surface area. The other is an appropriate Van der Waals response. Experimental traps that employ this principle have been made using substances called metal-organic frameworks.

    These are porous(多孔的)molecular networks through which the air can circulate. Their porosity gives them a huge surface area. And by picking the right ingredients, such as zirconium, they can be given the necessary Van der Waals properties. This way works, but the technology is costly because of zirconium.

In this difficult and tiring team event, participants finish a 10 to 12-mile barrier course that tests physical strength and mental courage. It’s more about friendship than winning. Over 150 such events worldwide have raised £5 million.

    But fundraising doesn’t have to involve physical effort. Students at a school in Illinois played Justin Bieber’s song ‘Baby’ over loudspeakers and urged fellow students to pay to stop the song. They needed to raise $1,000 in one week to achieve this. Beyond expectations, they exceeded(超过) the goal within three days. Even teachers chipped in.

    If you want to join the ranks of gorillas next September, you only have to pay £60 to register. This includes the gorilla suit, which you can keep.
