I had put off shopping for Christmas presents until later in the month but wasn’t looking forward to the crowd of Christmas shoppers while I grabbed my groceries.     Still, I gave my son a dollar to put in the bell-ringer’s pot at the door to the store. We went in and soon filled our cart with food. Then we walked towards the self-checkout machines. I hated using them. I much preferred to chat with the friendly cashiers, but the line at them was five deep and I just didn’t have the time. As I pulled my cart up, I heard an old man at the machine next to mine grumbling (嘟囔) under his breath, trying his hardest not to curse. He only had a few items but every time he put his wrinkled, well-worn, twenty-dollar bill into the machine, the money was returned.

    I quickly grabbed a newer twenty out of my purse and gave it to him. He thanked me with a warm smile and paid for his goods. I told him to keep his money but he insisted that I take his old, torn twenty. I nodded, put it in my coat pocket, and wished him a Merry Christmas.

    After checking out, I remembered something Mother Teresa had once said about how we all can change the world. “Help one person at a time,” she said, “and always start with the person nearest you.” I reached into my pocket, smiled, and went outside. Then I dropped that torn twenty into the bell-ringer’s pot and walked to my car with my son happily.

Cooking is an occasional hobby and a vehicle for celebrity chefs, which makes it odd that the kitchen has become the heart of the modern house. What the great hall was to the medieval castle, the kitchen is to the 21st - century home.

    The money spent on kitchens has risen with their status. In America the kitchen market is now worth $ 170 billion, five times the country's film industry. In the year to August 2007, the Swedish furniture chain IKEA sold over one million kitchens worldwide. The average budget for a "major" kitchen overhaul in 2006, calculates Remodeling magazine, was a staggering $ 54,000, even a "minor" improvement cost on average $ 18,000.

    Exclusivity, more familiar in the world of high fashion, has reached the kitchen: Robinson & Cornish, a British manufacturer of custom-made-kitchens, offers a Georgian-style one, which would cost 145,000 to 155,000 pounds -- excluding building, plumbing and electrical work. Its big selling point is that nobody else will have it: "You won't see this kitchen anywhere else in the word."

    The elevation of the room that once belonged only to the servants for the modern family tells the story of a century of social change. Right into the early 20th century, kitchens were smoky, noisy places, generally located underground, or to the back of the house, as far from living space as possible. That was as it should be: kitchens were for servants, and the aspiring middle classes wanted nothing to do with them.

    But as the working classes prospered and the servant shortage set in, housekeeping became a matter of interest to the educated classes. One of the pioneers of a radical new way of thinking about the kitchen was Catharine Esther Beecher, sister of Harriet Beecher Stowe. In American Human's Home, published in 1869, the Beecher sisters recommended a scientific approach to household management, designed to enhance the efficiency of a woman's work and promote order. Many contemporary ideas about kitchen design can be traced back to another American, Chris Frederick, who set about enhancing the efficiency of the housewife. Her 1919 work, House-Engineering: Scientific Management in the Home, was based on detailed observation of a wife's daily routine. She borrowed the principle of efficiency on the factory floor and applied mystic tasks on the kitchen floor.

    Frederick's central idea, that "stove, sink and kitchen table must be placed in such a relation that useless steps are avoided entirely," inspired the first fully fitted kitchen, designed in the 1920s by Mangarete Schutter Libotsky. It was a modernist triumph, and many elements remain central features of today's kitchen.

  • 24、Winemaker Justin Jarrett remembers when the grape harvest used to start. He and his wife Pip, used to take their kids on an annual beach holiday in February. When they returned to their vineyards (葡萄园) in the regional New South Wales city of Orange, Australia, in early autumn, they’d start the harvest. Today, harvest starts six weeks earlier in January.

    “What we did 20 years ago can’t work today, ”Jarrett says. “You have to adjust. ”

    Scientists used to have big debates about how to talk to farmers about climate change, says Snow Barlow, a professor specialising in viticulture at the University of Melboume. But recently there’s been a sea change. “Farmers are now saying. This is serious and we want to get on with doing things, ” he says.

    “Wine is a classical industry that has been very influenced by climate, ” Barlow says. “You grow grapes in particular areas because you think it’s the ideal place to grow a particular grape to create the perfect wine. ”

    Rising temperatures are not just affecting harvest times, but also the types of grapes that grow well in particular areas. Major labels, such as Brown Brothers, have moved some of their operations to the southern state of Tasmania where there are cooler sites for varieties such as chardonnay and pinot noir. Others are changing their varietal mix, introducing grapes from southern Italy, Sicily and Greece that are more heat- tolerant.

    The Jarretts have spent years adapting their winemaking business for a warmer world. They’ve invested in infrastructure, help them manage the compressed (缩短的) harvest time, and introduced more sustainable soil and pest (害虫) management practices.

    Jarrett is growing their grape varieties at higher elevations (海拔高度) than he used to. Sauvignon blanc, for instance, which he used to grow at 700m, has been moved up to 900m. He thinks he can keep moving his operations up to about 1100m before he has to buy more land.

    “We have to have a 20-year plan. If we’re going to move a variety or change something, we have to have at least 20 years of success to make it worthwhile,” Jarrett says. “We are really looking at varieties that are now considered hot climate. ”
