21、These days, nobody needs to cook. Families graze on high-cholesterol take-aways and microwaved ready-meals. Cooking is an occasional hobby and a vehicle for celebrity chefs.
Which makes it odd that the kitchen has become the heart of the modern house, what the great hall was to the medieval castle, the kitchen is to the 21st-century home.
The money spent on kitchens has risen with their status. In America the kitchen market is now worth $170 billion, five times the country's film industry. In the year to August 2007, IKEA, a Swedish furniture chain, sold over one million kitchens worldwide. The average budget for a "major" kitchen overhaul in 2006, calculates Remodeling magazine, was a staggering $54,000, even a "minor" improvement cost on average $18,000.
Exclusivity, more familiar in the world of high fashion, has reached the kitchen: Robinson &Cornish, a British manufacturer of custom-made kitchens, offers a Georgian-style. one which would cost £145,000-155,000—excluding building, plumbing and electrical work. Its big selling point is that nobody else will have it :"You won't see this kitchen anywhere else in the word."
The elevation of the room that once belonged only to the servants for the modem family tells the story of a century of social change. Right into the early 20th century, kitchens were smoky, noisy places, generally located underground, or to the back of the house, as far from living space as possible. That was as it should be: kitchens were for servants, and the aspiring middle classes wanted nothing to do with them.
But as the working classes prospered and the servant shortage set in, housekeeping became a natter of interest to the educated classes. One of the pioneers of a radical new way of thinking about the kitchen was Catharine Esther Beecher, sister of Harriet Beecher Stowe. In American human's Home、published in 1869, the Beecher sisters recommended a scientific approach to use hold management, designed to enhance the efficiency of a woman's work and promote order. Many contemporary ideas about kitchen design can be traced back to another American, Chris Frederick, who set about enhancing the efficiency of the housewife. Her 1919 work,
House-Engineering: Scientific Management in the Home, was based on detailed observation of a wife's daily routine. She borrowed the Principle of efficiency on the factory floor and applied mystic tasks on the kitchen floor.
Frederick's central idea, that "stove, sink and kitchen table must be placed in such a relation that useless steps are avoided entirely". Inspired the first fully fitted kitchen, designed in the 1920s by Mangarete Schutter. Libotsky. It was a modernist triumph, and many elements remain central features of today's kitchen.

22、 Punks, Ravers, Mods and Teddy Boys are the names of British youth subcultures (亚文 化) from the last 70 years.
Youth Club, a UK not-for-profit organization, released a book earlier this year celebrating many different subcultures from throughout Britain’s recent history.
“A catalyst (催化剂) for creativity on the worldwide stage, British youth culture movements from the Teddy Boys of the 1950s to the Grime Scene of the 2000s continue to play a pioneering role in music, fashion and creativity across the globe”, it wrote on its website.
These subcultures were traditionally a way for young people to show their personalities to others. Walking around London in the 1970s would have meant seeing dozens of young “punks” ——people dressed in ripped denim (破洞), leather jackets, body piercings (穿孔) and with brightly-dyed hair on the streets. And in the 90s, “ravers” were young people who threw all-night parties in abandoned buildings or car parks.
So, what was the reason behind these subcultures?
“On both sides of the Atlantic, more and more young disappointed teenagers were looking for an escape from the boredom and constraints (约束) of society,” wrote Ian Youngs, BBC entertainment reporter. “Unemployment, racial tensions and social upheaval (剧变) added fuel to their fires.”
“Fashion and music are much cheaper and faster today.” said Ruth Adams, a culture lecturer at King’s College London, “but it’s all a bit more blurry (模糊不清的).” She believes it’s harder to figure out someone’s personality or music tastes nowadays just by looking at them.
Despite this, Adams believes that today’s young people are still finding their own way to express themselves, but in a more modern way.

23、Baby seabirds that have not yet hatched communicate with their siblings (兄弟姐妹) in neighboring eggs by vibrating (震动) their shells (蛋壳), scientists have discovered.
A study of yellow-legged gulls revealed one of the known examples of embryo-to-embryo communication. When exposed to the alarm calls of an adult bird responding to a dangerous predator, developing chicks apparently were able to convey the presence of danger to their nest mates by vibrating inside their eggs.
The team collected 9 yellow-legged gull eggs from Sálvora Island and sorted them into nests of three. When the eggs were six days off hatching, two of the three eggs in each nest were temporarily removed from the nest and exposed to either a recording of a predator alarm call or white noise each day until the chicks hatched. The noise was delivered four times a day at random for three minutes at a time. The third egg from each group remained in the nest.
It was found that the embryos in the shells responded to the external alarm calls by vibrating and sounding less, and that this message appeared to be passed on to the third nestmate. It was seen to copy the vibrations. It experienced genetic changes and had an increase in the production of stress hormones (荷尔蒙) as well.
“This kind of communication—embryo to embryo—can generate developmental changes that can have potential benefits to the birds after hatching,” said Noguera, the lead author of the study.
A rise in stress hormones makes birds more aware of their surroundings after hatching. When hatched chicks were exposed to alarm sounds, it was found that those who had listened to the noises previously in the eggs were quicker to run away and hide.
Noguera said the phenomenon was likely to occur in other bird species. His team now plans to investigate whether the chicks are able to pick up other clues about their external environment before hatching, such as how many other eggs are in the nest.

24、Helping voters out
The US 2020 presidential election has captured people's hearts around the world. In order to allow voters to vote in person, poll (投票站) workers need to work at different vote centers. In past elections, most poll workers were elderly, but now that they are more at risk of severe symptoms from COVID - 19, there was a growing need for young people to serve as poll workers.
I first became aware of the opportunity to become a poll worker from a story on an Instagram account called “Poll Hero?”. It mentioned the effort to recruit young poll workers on a large - scale, and I immediately became interested in participating. I signed up to be a poll worker from the website, and a few days later, I registered through the High School Student Election Worker Program with the assistance of a Poll Hero volunteer.
After registering, there were two steps I had to take in order to become certified (认证的) to serve in this election. The first was an online training course, which takes around three hours. It covers the different roles workers have, different procedures workers must follow and provides information on how to use tools such as the electronic pollbook. The session is interactive, and I often engaged in simulated (模拟的) situations and knowledge checks to ensure that I understood each lesson. After taking the online course, I had to pass an exam with an 80 percent score or higher to complete that part of my certification. On my first attempt, I passed with a score of exactly 80 percent.
After passing the online course, I attended a two - hour in - person training session where I worked with a real electronic pollbook to practice what I would do on Election Day. The instructor took us through many different scenarios (场景) where we practiced assisting different types of voters. I was pleased to see many young people attend the session! In total, I spent 37 hours helping voters vote during this election. With my mask on the entire time, I checked in voters and helped them use the ballot (投票) marking devices where they could cast their vote. I also loved meeting fellow workers who are passionate about being engaged and helping our community. Taking part in this historic election is something I will never forget.
