  • 22、   Consuming food can be a pleasurable thing-we enjoy the mix of tastes and textures (结构) and it stops us feeling hungry too. Of course, food also gives us energy and the vitamins and minerals that our body needs. It’s no wonder we spend so much time preparing and eating food.     For me, it’s the unhealthy foods that put a smile on my face-chocolate, cakes and ice cream. But dieticians tell us that eating bad food long term, not only makes us put on weight but can lead to other health conditions such as diabetes (糖尿病), and it can also affect our mental state and bring on depression.

    The link between our mind and food has been looked at by scientists. They’ve recently found that it’s the bacteria in our gut that affects our mood. It’s thought we have 39 trillion of these simple, small organisms (生物体) in our body. Researchers at McMaster University in Canada have found that certain “good” bacteria help reduce anxiety in mice. Experts believe that, for us humans, this means food with “good” bacteria can improve the way we feel.

    Many food products are claiming to be high in this “good” bacteria and some of the best types are homemade food like miso soup, yoghurt and sauerkraut (泡菜). Doctor Michael Mosley would agree. He says the best food to cheer us up is in a “Mediterranean diet”. Olive oil; oily fish, full of omega 3, which is really good for the brain; whole grains; lots of fruits and vegetables. Sugar: terrible for you! There are other factors that can change our mood but it seems we have some ability to improve how we feel by controlling what we put on our plate.   • 23、As experts warn of a coming food crisis, the vertical farming industry aims to create plants that offer more nutritional value and require fewer resources. In vertical farms, plants are grown indoors. Each set of plants is placed above another. Workers control the climate and closely monitor each plant’s growth.

    AeroFarms is one of the top indoor-farming companies. One of its vertical farms is in a large building near a busy road in Newark. It grows more than 250 kinds of greens and herbs. Farmers wear gloves, coats and coverings on their heads. Their shoes must be cleaned.

    AeroFarms grows crops at the same rate throughout the year. The methods it uses lower soil destruction. They also reduce the amount of pesticides and water needed to grow the crops. The company says carbon emissions are heavily reduced. “We could do this whether it is in the Sahara Desert or a city like Newark,” David, the chief executive officer of AeroFarms, said. “We think about how we can really bring and celebrate different types of greens.”

    Alina, a dietitian and nutritionist at AeroFarms, says she wants people to eat more leafy greens like kale, one of the most nutritionally dense foods. She says if her company is to successfully encourage this kind of healthy eating, it must grow crops that taste good. “Americans especially don’t eat enough vegetables, and so for me the most exciting part is all of the different flavors that we have here. It makes eating your vegetables so much more exciting and so much more fun.” CEO David believes the company’s kale is tasty. “A lot of people like the nutritional density of kale, but they don’t like the taste. So we can make a sweeter kale,” he said. “AeroFarms is helping the world deal with a growing food shortage and people must change their focus from the number of calories they consume to the nutrition levels of the foods they eat.”

    Recent World Bank studies predict that an estimated global population of 9 billion in 2050 will require at least 50 percent more food. Experts say the crisis will be worsened by climate change, which they believe will reduce crop harvests by more than 25 percent during that time. They say the food crisis will have a larger effect on the world’s poorest citizens than on those who live in developed countries.

  • 24、My morning started out normally. Having hurried to complete chores, I raced out of the door for my mid-morning appointment.

    By the time I finished my appointment, I was starving. I stopped at Moe’s Southwest Grill to order a pancake to take home and eat while working.

    Since it was a little before noon, there was a line. A woman, who I soon learned was Marcella, was paying at the checkout counter.     I asked Marcella why she did this, and she shared that someone once did something similar for her. The person asked that she pay it forward someday and she was making good on her promise.

    Before I left, she gave me a warm hug and asked only that I do an act of kindness for a stranger when I could. I arrived home, but instead of working through lunch, I sat and reflected on her kindness.

    It reminded me of two things: Firstly, focus on positive interactions instead of the negative ones. Secondly, if you’re able to perform a simple act of kindness, do it. Marcella didn’t need to pay for my lunch. But she did, and it brightened my day. She was kind — with no expectations of receiving anything in return.

    As I have promised her, I plan on paying her kindness forward. Maybe, it make a small difference in someone’s life, and the ripple (涟漪)effect will continue, because that’s what being human is all about ——being kind ——even to a stranger.
